Casa Julián de Tolosa

Hace tiempo regalé un libro y lo dediqué, puse algo así como:

“Mínimo una vez al mes vamos juntos donde ocurre la magia. Donde nos sentamos y todo se para menos nuestros paladares y nuestra ilusión de que un día podremos hacer de todos estos lugares nuestro sueño.”

Éste fin de semana volvió a surgir la magia, esta vez en Casa Julián de Tolosa.

Entramos en un local ancestral, que mantiene su imagen pintoresca de sus inicios allá por 1951. La entrada, que hace las veces de almacén, da paso a un pequeño salón donde te rodean estanterías de madera con sus botellas antiquísimas y el polvo de otra época. Uno de esos rincones que, sin pretenderlo, es incapaz de dejar a nadie indiferente. De su parrilla, integrada en el propio salón, salen la que es para muchos la mejor chuleta del Pais Vasco (mucho hablar).

 El propio Julián y su hijo Xabi se van a ocupar de que el producto de primera calidad conecte con tus cinco sentidos:

  • El producto a la vista en todo momento igual que su elaboración. Recuerda que la parrilla es parte de las paredes del comedor. 
  • Escucha asarse las chuletas y entra en ambiente a través del olfato antes de comer. 
  • Saborea la carne, sin palabras. 
  • Usa las manos para el hueso (casi obligatorio).
 
El menú (nada extenso) se compone de maravillas como:
Ibéricos, jamón, chorizo y lomo
Espárragos de navarra 
Cogollos de Tudela
Chuleta
Piquillos asados
y de postre:
Cigarrillos y tejas
Arroz con leche
Helados variados
Queso
Xaxus
 
No puedo explicaros mucho más, el resto os invito a que veáis el video y que sin duda, si visitáis el País vasco, no paséis por alto venir a probar la chuleta de Julián.

    Magnífico artículo. Solo un añadido: Julián fue el fundador, que hace unos 40 años vendió el negocio a Matías Gorrotxategi, quien lo regenta junto con su hijo Xabi.
