Pollo con berenjena y garbanzos

Esta receta que os traigo en este post surgió del aburrimiento y de una nevera bastante vacía, de sobras y de recuerdos como es la ropa vieja después de un super cocido.

Tiene tres ingredientes principales: El pollo, la berenjena y los garbanzos. A partir de aquí podéis echarle imaginación. En casa hacemos con cebolleta o puerro bien pochado, a veces añadimos champiñones y cuando no hay garbanzos echamos lentejas.

Casi siempre la hacemos para cenar aunque es un plato apto para comidas o cenas incluso a veces en tostas de pan con un poco de queso ricotta queda de maravilla!

Tiempo: 45 minutos


  • 2 pechugas de pollo unas 5-6 láminas de finguers de pollo (en el supermercado a veces encuentras bandejas de finguers de pollo)
  • 200 gr aprox de garbanzos. (Yo no lo peso, lo hago a ojo pero para que os hagáis una idea)
  • 1 berenjena
  • 1 cucharada de café de pimentón (yo uso picante pero eso es al gusto)
  • Sal y pimienta negra molida 
  • Aceite de oliva
  • 1 cebolleta
  • Tomate frito casero


  1. En una sartén echar un chorrito de aceite y añadir los garbanzos con el pimentón picante y saltearlos hasta que queden secos y bien impregnados del pimentón. Una vez estén, reservar en un cuenco.
  2. Cortar la berenjena en tacos (a mi me gustan pequeños para que no tarden mucho en hacerse). Echarles sal y esperar unos minutos para que suden y pierdan el amargor y una vez hayan sudado lavarlas con agua y añadirlos a la sartén junto con la cebolleta pochada.
  3. Una vez que la berenjena esté bien pochada y blanda, añadir el pollo troceado en tacos (también me gustan tacos pequeños pero ya sabéis que eso es al gusto!)
  4. Cuando el pollo esté hecho, añadir los garbanzos a toda la mezcla y una cucharada sopera o dos de tomate frito casero (si no lo habéis hecho en casa podéis usar alguno de supermercado rico)
  5. Rehogar todo unos minutos, probar para ver que tal de sal y un poco de pimienta negra molida y listo!!
  6. El otro día acompañé esta receta con una crema de verduras hecha a base de: espinacas, puerro, calabacín, zanahoria, caldo de pollo y un poco de miso. Más adelanté os la enseñaré!
  7. tostamos los anacardos crudos en una sartén.
