En mi casa somos bastante fans de los mexicanos. Somos fans exquisitos de este tipo de comida. En general nos gusta tanto disfrutar de la comida que aunque no sea el mejor sitio y los mejores tacos los disfrutamos mucho pero si al lugar donde vamos a comer mexicano es bueno podemos considerarnos las personas más felices del mundo en ese momento.
Para comer buen mexicano a nosotros nos encanta Salón Cascabel (en el Corte Inglés de Serrano, Madrid), Punto MX, La panza es lo primero (no es el mejor del mundo pero hemos pasado muy buenos momentos y lo recordamos siempre con mucho cariño), Niño Viejo (Barcelona), Hoja Santa (Barcelona)
Bueno estos son algunos de los muchos sitios mexicanos ricos que nos gustan pero a parte de estos restaurantes muchas veces nos intentamos hacer los mexicanos en casa y cocinamos tacos. Hoy os traemos una receta de las muchas que hacemos/inventamos y que para no tener ni idea quedan bastante ricos. Nos encanta el plan de tacos en casa con mil cuencos para montártelo como más te guste.
Aquí os dejo el relleno de los muchos que hemos probado pero que sin duda para nosotros es el favorito.
RECETA DE TACO DE SOLOMILLO
Cantidad: 2 pax
Dificultad: Fácil
Tiempo: 45 Minutos
Ingredientes
- 3-4 Filetes de solomillo picados.
- 2 zanahorias ralladas
- 1 cebolleta picada
- 2 champiñones grandes
- 1 berenjena
- Pimienta negra molida y sal
- Salsa Sriracha
- Chiles rojos
- Salsa de tomate casera
- Tortillas mexicanas (yo uso de maíz)
- 1-2 Aguacates
- 1 Tomate pelado y cortado
- 1/2 Limón
Elaboración
- Endendemos el horno a 180-200º
- Cortamos las berenjenas en láminas (más bien gruesas) y las salamos durante 10 minutos para que suden y quitarles el amargor. Pasado ese tiempo las lavamos.
- En una bandeja de horno con papel de horno colocamos las láminas de berenjenas con un chorrito de aceite y un pellizco de sal y las metemos al horno hasta que estén doraditas y se blandas.
- Rayamos la zanahoria con un rallador y cortamos la cebolleta bien picada.
- En una sartén con un chorro de aceite lo rehogamos hasta que esté bien pochado.
- Añadimos los champiñones cortados en tacos a la sartén y seguimos rehogando.
- Cuando ya esté todo bien pochado, añadimos el solomillo triturado (lo podéis picar en casa en la misma Thermomix o que os la piquen en el supermercado, yo lo hago en casa directamente).
- Rehogamos hasta que la carne esté bien hecha y añadimos la salsa de tomate frito para darle más jugosidad.
- Una vez tengamos el relleno hecho, reservamos y hacemos el guacamole.
- El guacamole yo lo hago muy sencillo sin cebolla, sin ajo y sin cilantro, lo único que hago es machacar el aguacate, añadir el jugo de limón, un poco de sal y tomate pelado a picado.
- Una vez esté la berenjena dorada, la sacamos, le quitamos la piel (si está bien hecha debería quitarse sin problemas) y la cortamos en trozos para añadir al relleno con el resto de los ingredientes.
- Picamos muy finito el chile y colocamos en un cuenco.
- En una sartén vamos colocando una a una las tortas mexicanas y cuando vayan estando las metemos dentro de un trapo para que guarden el calor.
- Para terminar, colocamos todos los ingredientes en cuencos y que cada uno se lo monte al gusto! También podéis poner queso mozarella en algún cuenco, o queso Ricotta, la berenjena si no la queréis mezclar con el resto del relleno la podéis poner a parte.
- La salsa Sriracha es opcional. Es bastante picante y a nosotros nos encanta pero no tenéis porqué echarla en la mezcla del relleno sino que cada uno se eche en el mismo taco al gusto.
